JOB PURPOSE: The Manager, Menu Development is responsible for research, development, project management, and coordination of menu regulation for the food development team. This role will lead key projects involving the product development implementation efforts as they relate to the strategic menu development plan’ new or improved menu items, core menu, Limited Time Offers (LTO’s), food related promotions, and other projects as assigned.
CORE JOB FUNCTIONS/RESPONSIBILITIES:
 Manage the research, development, and testing of new menu items and new and improved kitchen/bar equipment that improves quality, efficiency, and workflow
 Work with third party suppliers in the context of new product development processes; engaged with them on product trends, new product ideas, product improvements, etc.
 Coordinate the action steps to ensure compliance with food ordinances, regulations, and laws, oversee the government menu labeling regulations (Nutritional, Allergen, Sodium, etc.) on behalf of BWW, recipe testing, documentation, communication, and compliance
 Oversee the coordination efforts system wide implementation of the menu development plan, second source efforts, new equipment, and small wares
 Collaborate with Learning & Development, Finance, Marketing, Operations, Purchasing, and other departments to generate support and materials (i.e. prep-sheets, guidelines, food, cost analysis, POS, etc.)
 
OTHER JOB FUNCTIONS/RESPONSIBILITIES:
 Ensure all guest related questions and/or complaints related to food quality and specifications are answered on a timely basis
 Ensure all Field, Franchise, and/or Home Office questions regarding recipes, products, equipment, and procedures are answered in a timely manner
 Support Learning & Development with the development of the implementation plan to include: Operations procedures for new products or revised products, recipe-related support materials, recipe books, photos, recipe cards, wall charts, DVD’s, spec manuals, training guides, follow-up guides, and in-store demonstrations

EDUCATION/EXPERIENCE
Required
Bachelor’s degree in food-related discipline or comparable
 8-10 years of practical professional experience as part of a restaurant corporate Research & Development department
 Strong project management skills and the ability to take ideas from concept to implementation
 Knowledge of menu concept development, management, and implementation and ability to follow through multi-step project steps/procedures consistently
 Ability to utilize a variety of resources to complete a research assignment and ability to summarize and present findings in a professional manner
 Ability to set own priorities, timelines, goals, and outcomes
 Ability to identify, coordinate, and implement Food related menu decisions
 Ability to have flexibility to direct changes and implement programs for the system
 
Preferred
 Bachelor’s degree in Food Science & Technology or Nutritional Science
 Culinary background
 Successful project management, menu management, development process, and communication
