Akua Akuffo completed her PhD in December 2017 from Purdue University. Her dissertation focused on household food security in Ghana and Tanzania focusing on seafood as the driver of change, funded by the AquaFish Innovation Lab under USAID.
One of her dissertation articles won the Best African Student Abstract Award at the World Aquaculture Society (WAS) annual meeting in Cape Town. South Africa in July 2017.
She is currently a Post Doc working with Dr. Kwamena Quagrainie on a project studying the viability of marketing locally sourced seafood from aquaculture in the Illinois-Indiana region through food hubs. Specifically, the study will assess food hub operations and seafood supplies as well as the operations of shared-use and commercial kitchens for fish processing.
